Why teaching your kids about healthy food is vital for them to make healthy choices!

I get the critics believe me, those who feel I am being "picky" about choosing to give my kids organic, or buying foods that are organic. As if choosing health is some sort of "curse" upon you that you should feel weird about. Also, I get the comments about price, "organic is so expensive etc." I will say this, yes it is more then other generic brand food. However, have you seen the price of junk food, chips, cigarettes, and cancer lately? The other day I walked down the "chip" aisle, and I actually could not believe the price of chips. Some of the family size bags are almost $5.00 for a bag of chips!! I have a choice, you have a choice. I could buy a bag of chips with little or no nutritional value for $5.00 or I can buy a bag of organic apples. It really is about trade offs. Making different choices.  Those who "put down" for choosing to be healthy just spend their money on different things than you do...that really is it!  It is a thought process. For me it is a pay now or pay later mentality. Now can I totally avoid cancer causing elements in this lifetime? Probably not, we are surrounded by it, the computer I am typing on, no doubt it probably giving me some sort of vibe. We all have cancer cells in our bodies, but what we feed our bodies helps keep us alkaline or acidic. Disease can not thrive in alkaline bodies.
We are teaching the future generations how to eat by what we make available for them. If you are the one making the food purchases, you are the one responsible. I get it's staggering and you can serve up some guilt trip to as to why we don't have time to make healthy options. But we do! We all do! We all have the same amount of time actually, we just choose to spend it differently. I am not saying every item in my pantry is 100% organic and I live off the land, I cant possibly do that where I reside. But I encourage you to look for local organic farms that you can support and buy your food from, where it is fresh and has more LIVE nutrients. There are money saving tips even when buying organic food.
You can stay along the outside edges of the grocery store to keep you from spending money on things that are not necessary. Purchase fruits for smoothies in the organic frozen aisle. It is cheaper and lasts longer! Try to have a meal plan and elliminate having a meat type dish every night. Organic meats and poultry can be expensixve if you buy for every night of the week. Limit the meat you consume weekly, it will keep you healthier , save you money, and you can get just as much proetin from plant sources.
I love my girls, I know that I can not keep them protected from everything. I do know that their health will be very important to them as they get older. Right now, I can not teach my kids at their young age of all the chemicals and how to read words they can not pronounce on the back of labels. But what I can do is SHOW them what is good and healthy! I can make food fun for them, I can make a green smoothie delicious enough for even a two year old to slurp down and that is what matters. Our bodies crave what we give it. To this day, my five year old does not drink soda. I do not buy it and I do not offer it. Someone offered her one and she took one sip and said it was TOO sweet and she did not like it. If you give kids healthy options they will not want crave the bad ones. Will they have stuff when we are visiting friends, probably! I am not going to circle over them and demand all my friends and family abide to our standards of eating. But I do know it is important to us when we are home. WE need to set the standard for our eating habits! Kids are depending on us.

Cookie dough dip...or is it?

Ok, I was skeptical I have to admit when I read the article and it described a tasty kid dip made with chickpeas that looked and tasted like cookie dough. But I have already put black beans in a blender and whipped up some brownies so it could not look or smell worse than that so I was ready to give it a shot. Oh was I surprised and I am totally hooked now. I can not take credit for the recipe but I had to share. All the moms and dads out there with the picky eater, this one is a big score and they think its cookie dough. You can tell  them they can have it without the eggs this time!! Both win...and they are getting about 7-8 grams of protein every wonderful bowl at a time. Serve it up with pretzels, apples, or pears!! And I know all you grown up's that cant stop licking the batter bowl...much healthier option! Eat the whole bowl if you want!

RECIPE: "Bean Dip" AKA Cookie Dough DIP!
In a food processor place the following:
1 can of Organic Garbanzo beans (chick peas) drain and rinse
6 tablespoons of brown sugar ( now you could do the Truvia but they are already eating a bowl of beans I would stick with the brown sugar the first time)
1/4 cup all natural peanut butter
3 tablespoons of raw oatmeal
1 tablespoon of milk (can use almond for dairy allergies)
2 teaspoons of vanilla
1/8 teaspoon of salt
1/8 teaspoon of baking soda
BLEND IT UP!
Sprinkle and fold in the dark chocolate chips and serve it up!! What a healthy treat!

Black Bean Brownies

I know what you are thinking....beans and brownies should not be in the same sentence! I have to say that this one sort of made me a little sick at the thought of putting beans in a blender, however, to my shock and delight this is a really great way to get some added protein in a healthy way and give you a new outlook on the past "fat filled" version of this tasty treat.

RECIPE

3/4 cup cooked black beans
1/2 cup of olive oil
2 eggs
1/4 cup cocoa powder
2/3 cup Stevia ( can use sugar but you add extra unwanted calories)
1 teaspoon of instant coffee or espresso grounds
1 teaspoon of vanilla extract
1/2 cup dark chocolate chips (the darker the better) divided
1/3 cup oat flour ( can use all purpose if that is all you have)
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1/4 cup chopped walnuts

Preheat oven to 350 degrees. Spray a 9x9 pan with non stick cooking spray. In a blender puree the beans and olive oil. Add the eggs, cocoa, stevia, coffee,vanilla,and 1/2 of the chocolate chips. Blend. Add the flour, baking powder,and salt. BLEND. Then add the walnuts and remaining chips and scrape the sides of blender, mix gently a few seconds. 
Pour into pan and bake 20 min.

Fruit Salsa

1 lb fresh strawberries
2 peaches
1 cup chopped pineapple
2 cups blueberries
1 1/2 TBSP Lime juice
1/2 cup agave nectar
1-3 TBSP Chili powder ( to taste)
1 tsp chopped cilantro
1/2 tsp chopped mint

Dice the fruit and combine. In a smaller bowl mix the agave, lime juice, chili powder,cilantro and mint. Pour over the fruit and toss together.

Chocolate Mint Protein Smoothie

Protein shakes sometimes get a negative reaction. However, the protein I use and also with my clients is an excellent source of all natural vegan protein. It is not whey based so your body does not have to process any harsh diary bi-products. My husband and I are always trying to come up with delicious new ways to make a protein shake. Last night I think he created one of the most delicious versions yet! Here is the quick and easy way to make your healthy smoothie. Thank you Matt! ;)

2 scoops Chocolate Protein Powder
5-6 almonds
Water or Almond Milk (whatever you prefer)
Crushed Ice
2-4 drops of Peppermint Extract ( to taste)
Fresh Mint ( for garnish, not necessary)

Power breakfast on the go

Every morning I run around making sure that the people and my house all get taken care of,and most of the time it is all before 7 am. Way too early for me. I loved being a morning person for years, then I had kids. The entire concept changed for me, it was no longer mornings to have quiet time and get ready in peace for the day. My mornings became quite crazy, intense, and at times almost in tears by 9 am. I needed to figure out how to eat healthy and not skimp on meals. I do protein shakes and make my own protein bars occasionally but most mornings I make myself this power breakfast that is quick and easy and I can do it in between getting dressed, changing kids, and cleaning up all kinds of disasters. The best part about it is that you can throw it in a bag if you need to run out the door for work.
Slice of multigrain bread toasted- Spread with almond butter and sprinkle with chia seed.
Grab a banana and slice on top or eat on the go.
If you are really in a hurry fold the bread in half to make it less messy and eat on the go.

How to make protein bars



Most people buy protein bars at the grocery store or vitamin stores to provide extra energy, supplement meals, or to lose weight. Most over the counter protein bars do contain the added protein that maybe you are looking for but they also contain a wide range of preservatives and added ingredients that just are not necessary. By making the protein bars in your home you can add or take away ingredients and you can make a weeks worth at a time. By making the bars this way it not only saves you time but you can see what you are putting in your body.
I thought I would share one of my favorites. You can make your own recipes by adding or taking away certain ingredients. This one is super easy and fast and makes a great breakfast on the go or a snack.
Chocolate Peanut Butter Trail Mix Protein Bar
1 cup of organic peanut butter
1 cup of Agave nectar ( can also use one packet of Stevia dissolved in 1 cup lukewarm water)
6 scoops of vegan chocolate protein powder
2 cups of Oatmeal (uncooked)
1/2 cup raisins
1/2 cup slivered almonds
1/2 cup chopped walnuts

Melt the peanut butter and stir in the agave nectar then mix that into the remaining ingredients and blend on a low speed. You may need to add 1/2 cup water if your consistency is too dry.
Spread with a spatula in a 9x13 pan and refrigerate, cut into squares, and take on the go!
** I use a protein powder that is plant based protein, gluten free and vegan. You can use other brands but this one does not contain whey which most do and this is much healthier for your body. Low Fat and Healthy Blueberry Muffins

Today I did some experimenting. Trying to cut the fat calories from food is not easy, especially when baking. Everything seems to use butter (lots of it) and sugar (lots of that too). I am searching for better alternatives. I have been using Stevia to replace sugar, stevia has  zero calories and you can use less than what the recipe calls for in sugar. I also have made a switch to coconut oil versus butter. This is an incredible alternative for butter. It has the same consistency but with a million times more healthier reasons to switch. I have also used olive oil instead of butter in some recipes. It really is one of those things you have to experiment with while baking. Stevia and Coconut Oil are two amazing things that will not disappoint.


So this is what my experimenting came up with today and I have to admit they are pretty good. I hope you can try them and maybe tweak them to suit your taste. Enjoy!
Blueberry Muffins
1 cup of non bleached all purpose flour
1 cup of wheat flour
3 tablespoons of Stevia
1 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp salt
2 cups of low fat organic milk
2 tablespoons of Olive oil
1 large egg
2 tsp of vanilla
2 cups fresh blueberries
Zest of one lemon
1 scoop of Fiber boost (optional but you can buy the fiber boost HERE)
Topping
1/2 cup uncooked oatmeal
1 tsp cinnamon
1 tsp of stevia
1/2 cup slivered almonds
Preheat oven to 400, place cupcake liners in pan or use a non stick spray in your muffin tins.
Mix all the dry ingredients. Flour, stevia, baking powder, baking soda, fiber boost, and salt. In small bowl mix the milk, olive oil, egg, and vanilla. Make a small hole in the dry mixture and pour the liquid mixture into the center and begin to stir until blended. Fold in the blueberries and place the mix into the muffin tins. Fill 2/3 of the way and top with oatmeal, cinnamon, and stevia mixture.
Bake 18-20 minutes.
Makes 12.

Taking Charge!

"Take charge of your life, dare to try new things,define your dreams and achieve them,start your day with a clear idea of what you can accomplish and go for your goals! Live your life on purpose. You were made for it!"
That saying alone is filled with enormous challenges and hope. You see when you realize that you are capable of turning your mentality from a survivor way of thinking to a thriving way of thinking, your entire life changes. Have you ever seen someone or been that someone that is in survival mode? It is gut wrenching and painful to watch. I have been there. Survival mode is thinking, I need to get through this day and the person is consumed by overwhelming circumstances. Thriving mode takes an entirely new turn, it is the mindset that you are not only going to get through the day but you have hope and purpose in your heart to live the life you were intended to have from the moment of your existence. 
Take Charge! And no I do not mean be a boss of others. I mean literally take charge of your own life. Grab your boot straps and put on your big girl panties and figure out a way to deal with the mess, whether or not you were the one who created it, you can find a way out of it. One step at a time. One choice at a time. One moment at a time. YOU can do this! 
Dare! I dare you to try new things. New does not have to mean bad. New can mean refreshing, uplifting, healthier, freedom, abundance, and growth. You have heard the saying, "Some people never change! " Well it is true. Some people never do, but that does not mean that they are incapable of changes, it just means they resist them and never dare to dream or become a different and better individual who is healthy from the inside out. 
Define Your Dreams! Write them out and over and over again. If you have done this at any time in your past, do it again. It is never too late to define, refine, and maybe come up with some new dreams. Seeing them on paper with your handwriting burns impressions in your mind and heart that you can not let go of and it is a great reminder of what life is all about. 
Live On Purpose! To live a healthy life from the inside out and live on purpose means that you will come to understand you were made for greater purposes than to just walk around and do the daily grind. Other people need you, people are counting on you to become all you need to be, your health becomes more of a constant state of mind as you realize, without your health, you have nothing. One becomes less self centered and more kind as the focus turns from one' s self to others as you come to an understanding that life is short, and about leaving your legacy. Many people think that to take care of themselves it is selfish. Taking care of yourself is actually the opposite, it shows other people you have a deep respect for life, God, family, and for making the most of your life. 


So go and live your life. Live the life you were meant to live. If that means changes, than I dare you to change. Fear only keeps you where you always have been and never helps you get to where you want to go.

When Life Gets in The Way!

The Great Balancing Act
Trying to reach your goals and fulfill your dreams is hard enough without distraction but when life gets in the way that is when you need to understand that this is where your determination and a huge balancing act need to kick in. Life will get in the way! There is no denying the power of distraction, it happens. Sometimes it is very legitimate things that come into our lives that do require our attention, however, you need to keep in mind what your goals are for your life in these certain area’s.
1.     Have a plan of action. You need to know ahead of time which things are the most important to you. EX: Family, Health, Work, etc…Make a list if you need to and prioritize.
2.     Stick to your plan. I know it sounds basic, but really it is formative in reaching your goals. If you know that you have set time aside for your family than be true to your commitments, if you know you want to get up earlier and work out and you have that as a set plan of action then schedule it in and stay committed to this.
3.     Prepare for battle. Some of you are wondering what I mean by battle? Well, if you are planning on doing anything to better your life prepare for the battle of your life. You will find that your mind plays a huge role in achieving success, you will have to reign in your fear and go forward.
4.     Develop tougher skin. I know this is not easy for some people, especially those who are more sensitive by nature. And sensitivity is an amazing attribute that can be used to bless the lives of others in many ways. But what I am referring to is tougher skin in regards to your own well -being. It is sad but when you start to reach your goals and you are becoming more successful, there will always be someone you love or even hold dear that will in their heart not be happy for you. This will hurt. You will not understand this unless you prepare for it. It can cripple…and actually hault someone’s progress. But you have to know that if someone is not happy for you….they are not happy! Their unhappiness is with themselves now your achievements. GO FORWARD!
5.     Reassess!! To reach your goals it will require a time of reflection and making sure you are staying on track. Get accountability with someone you trust to make sure you are moving forward. Set up smaller goals along the way to ensure you are staying on task.
6.     Be honest. You have to be in tune with the reality of your life and situations. Many times people are not realistically looking at what is right in front of them and they are out of touch with their own reality. Take a hard look at yourself and be honest with yourself if you are not reaching your goals. Ask yourself some questions EX: “Am I really serious about these goals?”: “Am I being honest with myself about my weight, finances, relationships, etc?” If you can’t be real with yourself about what your situation actually is, you can’t be in a position to be healthier.

Chia Chia Chia!!! A super seed.

Many of us have heard of the Chia pet but the Chia Seed is an amazing little seed. It has been used for centuries and is one of the most powerful little things you can put into your body with little effort. Most grocery stores as well as natural whole foods stores are carrying this little super power.
What does Chia do for your body? Here are just a few of the health benefits. Chia is pretty much tasteless, you can add it to anything you want and it adds a super punch to your nutritional intake.

Life Choices on food

This week I have personally experienced what little choices can go a very long way in over all health and wellness. We had my husband's family visiting from out of town and while here his grandfather experienced a heart attack. It was incredibly stressful and sent us all in a panic. They were able to save his life and he had three stints put in to clear some of the blockages. However, they were not able to travel back home for a week. So they stayed with us while he recovered. This is when I experienced one of the greatest frustrations I have seen in long time. Just three days after experiencing a heart attack the man was eating KFC. I began to probe into their diet and found that even though he had this condition for some time his diet was still very high in sodium, preserved tv dinners, and a ton of options using hydrogenated oils and preservatives. These are huge contributing factors in developing health problems, yet people are uneducated in what they are consuming.
Most consumers buy cream for their coffee on a daily basis. Seems simple enough, right? Not really. Most creams are packed with preservatives and hydrogenated products. Look at the label. It should say milk and or cream. If anything else is added to it and you can not pronounce the word, it is basically bad for you over the long haul. That would be a product you use every single day multiple times. Those are the things you need to watch out for in consuming. It is hard to do a complete and radical all organic lifestyle for some, I get that, I have heard everyone's rational on this from one extreme to the other. Some love it, some cant afford it, it is a tough call. I always say, you will pay a few cents extra now or pay later with medical conditions.
But start small in your daily choices if this is too much to process,think of what you consume daily and what you consume the most of weekly. Start by choosing fresh veggies and fruit over canned. Try to stick to grass-fed meat or organic. Dairy is also huge for ensuring you go hormone free.
Label reading is very important and key if you want to obtain overall health. Most people do not realize that even little things like added cream can be a problem. It is not the cream, it is the products used in the cream that are meant to sustain it for "months" that are an issue. Dairy should not last that long. It is like the commercial when the little girl says, "mom, what is non dairy creamer?" EXACTLY....my point.
Life choices are important especially in food intake. Food is fuel. Food is key for optimal performance and longevity. And most importantly you have to want it. Change will not happen until you want it to happen for you. Make better choices, your life depends on it.

Pregnancy Health

So today I am writing this little health quip a little out of personal want and a tad out of irritation. See this is the thing, I am currently pregnant and what you hear from other people sometimes can be so outrageous it isn't even funny. I am not one of those ladies who "love" it or who will miss it or long for the days when i was pregnant again. I just am not like that. Pregnancy for me means that I get to bring a beautiful new life into the world but in the mean time I throw up most of the time, can not sleep, and am in a ton of pain from the waist down from joints and muscles shifting. Those are just the facts. I have friends who love it, cry about, and can't wait to do it again. Me on the other hand, will celebrate the day my love's come into the world and then move on with my life to care and raise them. The crazy part of all this is that everyone wants to give you advice. People that should not give you advice...tell you what to do.
I have been told to do some of the following things.
"Eat for two...now is the time....live it up."
"It does not matter what you eat, you are pregnant: feed the baby!"
And one of my all time favorites..."Now make sure you eat a lot and good so you have a healthy baby."
As if...as a mother growing a child...I would eat bad? Or not want my child to grow healthy?
In the meantime the people who say this are not meaning eat "healthy". They mean eat whatever and in large portions.
This is what i have to say on this topic and being pregnant and have done my research and have an education in these areas , this is the TRUTH.
Pregnant women need an additional 300 calories a day. Now if they are obese or underweight, the calorie count will vary. BUT 300 calories additional a day is really what you need typically. Now, do you crave 300 more calories a day? NO way! Especially in the middle and in the end you will feel super hungry and want to eat whatever you want. This is really where pregnancy weight gain can get totally out of control. You have to keep in mind that what you eat, so does your child. The doctor gives you certain things you need to avoid, those you should keep in mind. Also, eat foods that are rich in vitamins and minerals. If you have a juicer and can juice vegetable juice it is a great way to get additional nutrients. For some women, they can not stomach the prenatal vitamins, there are other ways you can supplement if you need to.
Examples of an additional 300 calories:

Each of these healthy choices has about 300 calories:
  • 1 cup of non-fat fruit yogurt and a medium apple
  • 1 piece of whole wheat toast spread with 2 tablespoons peanut butter
  • 1 cup of raisin bran cereal with 1/2 cup of non-fat milk and a small banana
  • 3 ounces roasted lean ham or chicken breast and 1/2 cup sweet potatoes
  • 1 flour tortilla (7-inch), 1/2 cup refried beans, 1/2 cup cooked broccoli, and 1/2 cup cooked red pepper.
  • It is important to gain a healthy amount of weight for your size. It reduces complications such as diabetes, blood pressure, and back problems.Gaining too little weight during your pregnancy makes it hard for your baby to grow.If you gain too much weight, you are more likely to have a longer labor and more difficult delivery.  Extra body fat will make it harder for you to return to a normal weight after you have your baby. If you feel you are gaining too much weight during your doctor or a nutritionist. 
  • TIPS:
  • Eat small frequent meals during the day.
  • Start with a healthy breakfast.
  • Drink water all day to keep from dehydrating.
  • Eat high fiber foods.
  • Have healthy snacks on hand. (fruits, veggies, and nuts)
  • Avoid spicy foods.
  • Drink in between meals instead of with your meal. 
  • Get exercise every day, even if walking.

Overweight and In Debt

Yesterday my husband and I spent the afternoon celebrating the fourth of July. As we enjoyed a wonderful day out I could not help but notice soda machines at this particular tourist attraction. These were not the typical soda machine where you put your change in and you can pick your deadly drink. These were fully equipped with credit card readers and distributed you a receipt for purchase. Not that you need a $1.00 receipt but that really is not my point. I am so unbelievable annoyed by this discovery. Obesity is one of the fastest growing problems here in America along with credit card debt. Seeing these just proved even more that companies are not "helping" the american public by offering them a more convenient choice to pay for their addictions but they are helping them down a road to self destruction.
If someone that chooses to drink soda, does not have the money for it, why should they be able to charge that drink?
It is so disgusting. More options for people to continue to be overweight and in more financial debt. Very  sad!

Great "green" smoothie!

If you have a Vita- Mix this is an amazing and refreshing summer smoothie, that can be enjoyed any time!
1/2 cup water
1/2 cup pineapple
1/2 medium banana
2 cups fresh and washed spinach
1/2 cup ice cubes

Place all ingredients into the vita mix. Turn on machine and increase speed to max 10 then down to high. Blend your smoothie for about 45 seconds.

Whey versus plant based protein

Whey protein has been used for years by athletes, trainers, weight loss plans, and as an additional supplement. Protein is needed to build muscle and in addition add more calories to your diet if trying to bulk up. Protein shakes can be taken as a meal supplement if trying to lose weight as well. But here is the thing, whey is milk. Milk is dairy. More and more people are having a harder time digesting dairy. Realistically our bodies are not designed to be process dairy. There are other alternatives like almond milk. If trying to be healthy and you want to use protein supplements, I suggest you look into vegan and gluten free plant based proteins. There are protein shakes and mixes that are derived from plant bases that are just as healthy, taste great, and easier to digest.

Thinking about Health

Most people do not think about their health until they are already sick or their body is in such a toxic state they have a deadly disease. It is so important to start thinking daily about health. Health is more than physically being in great shape. Recently I held a seminar on the importance of overall health in three major areas: physically, emotionally and spiritually. Finding a balance is really so key to live a healthy and full life. One can be physically in the best shape pf their life but their inside person can be a complete mess.
There are certain active steps that can be taken in ensuring you are giving time needed to the most important areas in your life.
1. Recognize you need to be more proactive and use your mind to think about your responsibility that you have to keep your health in check.
2. Take time for solitude to recharge and mediate on peace and goodness.
3. Take breaks often.
4. Create healthy meals for yourself and your family in spare time.
5. Research food items and read labels. Take it serious when you are consuming food, that you know what is in the ingredients.
No one will take it more serious than you to make sure you have a healthy life. Do not wait until you are sick to change.

Stay at home parents and working out

For many parents who stay home with their children, it can be hard to work out. Children can be very demanding of your time and finances, so a gym may not be possible. Also, many people believe to work out, they need gym equipment, that could not be further from the truth. Exercise can be started with little or no equipment and can be cost effective for those who do not have extra costs for a gym.
